If you want to learn how to bake and would love to experience being on board a Narrow Boat and, weather permitting, get out on the canal then this is the course for you.
If you’re a complete novice be assured that all of the processes will be explained by me, a trained baker with over 30 years experience and as we will only have a maximum of three on a course you are guaranteed more one to one tuition than some of the bigger bakery schools.
We all have to start somewhere, and my aim is to help you enjoy and understand the baking processes and hopefully ignite and take away with you, a desire to learn more about this fantastic craft
Courses can be geared to individual requirements with prior consultation and home visits can be arranged so that you can learn in your own kitchen. Or maybe you’re thinking of going professional and want to open your own shop and need advice on some of the pitfalls you will encounter, in taking on such a big challenge.
All courses will be hands on, so for example on our bread courses you will get to learn the feel of a dough at all the different stages of the mixing process, from the sticky mess to the smooth elasticated well developed dough piece.
You will be given full recipe instructions that you can take away for future reference and I will be giving tips and guidance throughout.
Carl started as a baker way back in 1967, attending Salford College of Technology on a three year Sandwich course to obtain City and Guild’s in:
Advanced Bread making, Advanced Flour Confectionery and Cake Design and Decoration of Flour Confectionery.
During the last 30+ years carl has worked in many aspects of the food industry and has mainly worked with traditional British bake house favourites, from Pork Pies to Wedding Cakes, but lately he has had the time to explore continental breads and Sour Dough’s.
